Allergens control

The only proven therapy for molluscan shellfish allergy is strict dietary avoidance. Problems may arise with avoidance diets when clam is present due to mislabeling or to cross-contact during food processing (Taylor and Hefle, 2005 Taylor et ah, 1986,1999). In January 2007, CCFRA in the UK commissioned a member-funded research project to better understand the suitability of rapid allergen detection kits for food allergen control (CCFRA, 2008). Their work will focus more on the catering environment, although it will examine the performance of the rapid allergen kits, particularly in support of cleaning programs. The project is expected to be concluded later in 2008.
