COOH.—The natural acids are all C18 compounds, and were obtained first from linseed oil They do not occur in human storage fat, but are found mostly as phospho-lipides and as esters of cholesterol. Linoleic acid, the chief member, is an important constituent of vegetable drying oils on which it confers the power of hardening to form a film on exposure to the air. Its formula is C17H31.
