PAHs can be bioconcentrated or bioaccumulated by certain aquatic invertebrates low in the food chain that lack the capacity for effective biotransformation (Walker and Livingstone 1992). Mollusks and Daphnia spp. are examples of organisms that readily bioconcentrate PAH. On the other hand, fish and other aquatic vertebrates readily biotransform PAH so, biomagnification does not extend up the food chain as it does in the case of persistent polychlorinated compounds. As noted earlier, P450-based monooxygenases are not well represented in mollusks and many other aquatic invertebrates (see Chapter 4, Section 4.2) so, this observation is not surprising. Electron spin resonance, nuclear magnetic resonance, and neutron diffraction methods allow a quantitative determination of the degree of covalence. The reasonance methods utilize the hyperfine interaction between the spin of the transferred electrons and the nuclear spin of the ligands (Stevens, 1953), whereas the neutron diffraction methods use the reduction of spin of the metallic ion as well as the expansion of the form factor [Hubbard and Marshall, 1965). The Mossbauer isomer shift which depends on the total electron density of the nucleus (Walker et al., 1961 Danon, 1966) can be used in the case of Fe. The brown or whole meal bread diets employed by previous investigators were often variable in calcium and phytate intakes, not only between individuals, but by the same individual subjected to different diet treatments. Nevertheless an estimate of the molar ratio of phytate/calcium in the brown or whole meal bread diets used by McCance and Widdowson (UO), Walker et al. (11) and Reinhold et al. (2, 12) is 0.25 or greater. These investigators observed either negative or less positive calcium balance and apparent absorption when the brown bread diets were consumed compared to white bread diets with phytate/calcium molar ratios less than 0.05. Our results support their findings. Reinhold et al. (2) and McCance and Widdowson (33) used sodium phytate in some studies as well as whole wheat bread and observed similar results. [Pg.72]
