Sellami et al. (2012) in a solvent free system using a Rhizopusoryzae lipase immobilized onto CaCOs to produce a suitable fat for margarine formulation. This ecofriendly approaeh used low value bioresources like palm stearin and palm olein to obtain a healthier product. The triacylglycerol (TG) profile showed a decrease in the amoimts of saturated TG and increased the lower melting point TG ratio, especially triolein (000). [Pg.67]

The fatty acid composition of the triacylglycerols determines their physical nature. Those with a high proportion of low-molecular-weight (short-chain) and unsaturated acids have low melting points. Thus, tristearin is solid at body temperature whereas triolein is liquid. [Pg.36]

Modified triacylglycerols can occur in different polymorphic forms, and these influence the melting properties of the fat, the softening point, the solids content, etc. Analysis of such properties is commonly performed using differential scanning calorimetry (DSC).
