The Preference for Potato Starch in Applications

An overview of the average performance and preference of commercially available starches and their derivatives is given in Table 11.7.38 The suitability of the starches for these uses is indicated by + + + (particularly suitable), + + (suitable) and + (less suitable). 

As can be seen, there are differences in performance between the starches and derivatives of different biological origin. Two groups of factors have a significant influence on the choice of the kind of starch used in certain applications economics and performance factors. Starches produced from different sources are not interchangeable in every use. In some applications, a particular kind of starch is preferred, irrespective of price concerns. However, for most applications, there is a certain degree of interchangeability between different kinds of starch.
