Sweet stout

Stout. Stout is a very dark beer with a sweet, slightly burned taste and a strong malt flavor. It is heavier than porter and is strongly, hopped. It contains 6.3—8.3% by vol alcohol. Storage time is about six months and fermentation usually occurs in the bottie. Dry and sweet stouts ate brewed using different amounts of black malt, caramel malt, and hops (6). [Pg.12]

This is a very good, basic recipe producing a semi-sweet stout with complex malt flavors. A rich coffee-like flavor predominates. Full-bodied and smoothfinishing, this brew has a taste that is a cross between Guinness and Mackeson, but not as sweet as Mackeson, nor as dry and bitter as Guinness. This brew finished first in the 1988 Novice Homebrew Competition sponsored by the Florida Institute of Zealous Zymurgists (F.I.Z.Z.), as well as taking Best of Show in that competition. [Pg.126]

This has the roasted character of a dry stout, but is not as dry as Guinness, nor as sweet as Tooth s Sheaf Stout. [Pg.123]

This beer started out sweet, but matured into a unique stout after about 6 months, and held up until the last bottle was gone — almost a year and a half after brewing.
