Starch endospermic legumes

W. may be started from the whole grain, bulb or tuber, which are disintegrated or cmshed after hydration and extraction of solubles (steeping), or from flour after initial - dry milling and starch (endosperm) enrichment in the case of cereal grain or seeds (legumes). Most of the galactose and mannose produced in the endosperm of all these legumes is absorbed by the cotyledons and further metabolized. Several workers have proposed that these sugars are rapidly phosphorylated (to Gal-l-P and Man-6-P).
