Slaughtering process

Cattle are processed at a fully certified abattoir near Toowoomba, Queensland, a distance of up to 1600 km for some partner properties. The transportation and slaughter processes are rigorously controlled to avoid contamination and ensure separation from non-organic stock. Specific standards were developed for transport and handling of the stock over this distance, and endorsed by NASAA. 

Animals have to be slaughtered before being fit for hiunan consumption, the slaughtering processes are regulated by different rules for each religion. Muslims may eat kosher meat but Jews not halal one. Furthermore, according to kosher dietary laws meat and dairy products must be eaten separately. 

Lactic and acetic acids are used in the beef industry for the decontamination of carcasses. The effectiveness of these acids is dependent on the concentration and temperature of the acid solution, the exposure time and application pressure, the application stage in the slaughtering process, the tissue type, the type of microorganisms, and the level of initial concentration [37], Therefore, a higher lactic and/or acetic acid concentration might be expected in meats treated with these acids. 

LA is widely used for reducing the number of padiogenic bacteria like E.coli, Salmonella, Campylobacter and Listeria on animal carcasses like beef, pork, and poultry during the slaughtering process.

Analysing scenario III the agrarian chain consists of the slaughtering process and cattle-breeding. Here the cattle-breeding plays an outstanding role in the production of biodiesel from tallow, where the main part of the cattle-breeding footprint can be attributed to fodder-production and emission of ammonia.
