Sensory defects

Milk from cows affected with mastitis alters the sensory quality of raw milk and cheese (Munro el al., 1984). Sensory defects are reported as increased rancidity and bitterness, factors which are consistent with higher levels of lipolysis and proteolysis (Ma et al., 2000). [Pg.103]

Neuropathy has not been reported in patients with leprosy taking the usually recommended dosage of 100 mg/day. Isolated cases of dapsone-induced peripheral neuropathy, including motor and minor sensory defects, have been published (15,16). The clinical characteristics include a motor neuropathy affecting the extremities with onset within 5 years after the start of dapsone therapy in doses of over 300 mg/day. Complete recovery from the neuropathy almost always occurs after the dose is reduced or the drug is withdrawn. [Pg.1051]

Methylprednisolone, a glucocorticoid with antiinflammatory and immunosuppressant properties, is used in the treatment of severe inflammation or immunosuppression. In addition, methylprednisolone has been used in the treatment or minimization of motor/sensory defects caused by acute spinal cord injmy (see also Tables 11 and 14). [Pg.434]

As part of the AUPALESENS programme, we tested the capacity of autonomous and dependent elderly people to verbalize the sensory defects and qualities of some products. Two methods were tested the focus group and the use of open-ended questions as part of a hedonic test. [Pg.501]

If any of the senses are defective the necessary information may not arrive at the brain at all, or may be so distorted as to be unrecognisable. Some sensory defects are set out in Table 13.1. Sensory defects can also be... [Pg.245]

It is of interest that 46% of the male population and 92% of the female population can smell this off-odor [38], and thus females are most commonly offended by this off-note. It is caused by some combination of 5-a-androst-16-ene-2-one [39], 3-hydroxy-5-a-androst-16-ene [40], indole, skatole [41] and potentially, 4-phenyl-3-buten-2-one [42]. Despite the large amount of research devoted to this sensory defect, the problem persists throughout the industry. [Pg.174]

A microbial conversion of sensory significance already discussed to some extent is the conversion of phenols to chloroanisoles (airborne taints). A defect in wine recognized as cork taint is considered to be primarily due to this conversion. It was estimated that cork taint results in the rejection of 2 to 6% of commercial wines [146]. While this reference is somewhat dated, it is of relevance that this is the second most researched (based on number of pubUcations) sensory defect in foods (after boar taint), which suggests that the defect is still of importance to the industry. Chloroanisoles can be formed from the microbial conversion of pentachlorophenol (a component of some insecticides and wood preservatives) in the cork or from hypochlorite treated corks (forms chlorophenols) with subsequent microbial methyl-ation to the anisoles. In either event, the chloroanisoles (primarily 2,4,6-trichloro-anisole) are formed on/in the cork and leach into the wine [127]. This has lead to a movement within the wine industry to use synthetic bottle stoppers in place of cork. [Pg.191]
