Standard Solution Add 0.15 mL of the Sample Preparation to 140 mL of the Sucrose Solution, and mix. This solution contains the equivalent of 240,000 Scoville Heat Units. [Pg.946]

Test Solutions If the oleoresin sample is claimed to contain more than 240,000 Scoville Heat Units, prepare one or more dilutions according to the following table ... [Pg.946]

Procedure Select five panel members who are thoroughly experienced with this method. Instruct the panelists to swallow 5 mL of the solution corresponding to the claimed content of Scoville Heat Units. The sample passes the test if three of the five panel members perceive a pungent or stinging sensation in the throat. [Pg.946]

Apart from the organoleptic determination of pungency (Scoville heat units [239]), the capsaicinoids are determined quantitatively, photometrically or singly best with HPLC (e.g. [240, 241, 242]). The quantitative determination of pelargonic acid vanil-lylamide, which is available synthetically and, therefore, prone to adulteration, is of special importance. This substance is only present in small amounts in genuine mixtures. [Pg.242]

One of the few situations requiring a QC panel evaluation is the determination of Scoville heat units. While there are analytical methods available for the determination of capsaicins [15], a sensory approach [16,17] is often still used. [Pg.455]
