In the 1930 s, a compound named bios was isolated from egg yolk and found to stimulate the growth of yeast. At about the same time, an extract of Rhizobium trifolii, which stimulated growth and respiration, was discovered. This new factor was called vitamin R. It has also been known for some time that raw egg whites inhibit the growth of young rats. This effect was shown to result from a compound called avidin in raw egg. [Pg.278]
