Mustard, Black. Brown mustard red mustard. Dried rips seeds of Brassica nigra (L.) Koch, or of B. juncea (L.) Cosson, and of varieties of these species (Cmciferael, Habit. Europe, Asia, naturalized in U S. Consrit. Sinigrin (potassium myronate), my rosin, sinapine sulfocyanate, fixed oil erucic, behenjc, and sinapolic adds. [Pg.995]

This essence does not exist preformed in the mustard, but results from the decomposition of a peculiar constituent of the seeds, potassium myronate, determined by cryptolytic action set up by another constituent, myrosin, in the presence of HaO. [Pg.303]

Potassium myronate exists only in appreciable quantity in the black variety of mustard, from which it may be obtained in the shape of short prismatic crystals, transparent, odorless, bitter very soluble in HaO, sparingly so in alcohol. [Pg.303]

At temperatures above 40° (104° F.) myrosin becomes coagulated and incapable of decomposing potassium myronate, a. change which is also produced by contact with acetic acid. Aa the rubefacient and vesicant actions of mustard when moistened with HaO, are due to the prod action of allyl sulfocyanate, neither-vinegar, acetic acid, nor heat greater than 40° (104° F.) should be used in the preparation of mustard cataplasms. [Pg.304]

Composition.—The vesicating power of mustard, and the pungent odour emitted by it when moistened, depend upon a volatile oil (allyl sulphocyanide, C3H5CJNS). It does not exist ready formed in the seed, hut is developed by the mutual action of two of its proximate principles, viz. synap-tase or myrosin, a kind of ferment, and potassium myronate, in the presence of hot, but not boiling water. ... [Pg.215]
