These experiments confirm and extend the observations made on a simple model system. Of the lipolytic products, the least soluble in bile acid solutions are fatty acids. Monoglyceride and soap have much higher solubilities, indicating that the formation of a clear micellar phase is enhanced in vivo by alkahnization (from pancreatic bicarbonate) or by having an appreciable fraction of fatty acid present as monoglyceride (which occurs because of the positional specificity of pancreatic lipase).
