The interest to the Sea of Azov was always related to its large fish stocks, which are inferior only to that of the Caspian Sea. Annual fish hauls (sturgeons, pike-perchs, breams, and sea roaches) in this small sea reached 300 kt. This triumph of fishery was confined to the period of the natural harmony between the processes in the sea, when it was characterized by a high quality of the environment. 

After the Caspian Sea, the Sea of Azov is the second most significant inland basin of the former USSR with respect to its fish stocks. Recently, every hectare of its area provided 80 kg of fish, half of which was represented by valuable and very valuable species (sturgeons, pike-perches, breams, sea roaches, and others). The annual fish production in this smallest sea reached 300 kt. This triumph of the Sea of Azov fishery was related to the times of complete harmony between the natural processes, when the sea was characterized by a high quality dwelling environment. 

Next to thofe fhould be ranked the white river-fifli, which have fcales, as pike, perch, gudgeon. 

The CLA level of common marine foods proved to be lower than that of meats and raw milk. The total CLA content was measured to be approximately only 0.5mg/g moreover, the most abundant isomer in continental food products (cis-9,trans-ll CLA) was not detected in food of marine source (Chin, Liu, Strokson, et al., 1992). The CLA content of fishes varied from 0.1 (pike perch) to 0.9mg/g (carp) (Fritsche Steinhart, 1998).

Some important freshwater flsh are eels carp tench roach silver bream pike, jackflsh or pickerel perch, pike-perch or blue pike salmon rainbow, river or brown trout and pollan (freshwater herring or white flsh). Unlike sea flsh, the catch of freshwater flsh is of little economic importance (cf Table 13.2), although it does offer an important source of biologically valuable proteins. 

The concentration of mercury in most foods ranges from ten thousandth to hundredths of mg/kg (Table 6.14). High concentrations of mercury (tenths to units of mg/kg) are found in some edible mushrooms, fish, shellfish and crustaceans. For example, mercury concentrations in fish in the Czech Repubhc were as follows carp 0.01 mg/kg, roach 0.08 0.23 mg/kg, tench 0.14-0.64 mg/kg, perch 0.14-2.43 mg/kg, pike 0.16 2.87 mg/kg, zander (pike-perch) 0.34-1.90 mg/kg, eel 0.13-2.40 mg/kg.
