Pectins depolymerase

This enzyme [EC 3.2.1.15], also known as pectin depolymerase and pectinase, catalyzes the random hydrolysis of l,4-a-D-galactosiduronic linkages in pectate and other galacturonans. [Pg.566]

Pedate lyase Hydrolysis of pectate to oligosaccharides. Pectin depolymerase Hydrolysis of 1,4-galacturonide bonds. [Pg.21]

Each fruit has specific quantities and ratio of pectin, hemicelluloses and cellulose. These polysaccharides are important concerning enzymes activities required to produce juices and concentrates. Moreover, even if molecular weight and methylation degree of the pectin are specific for each fruit, during the fruit maturation, endogenous pectinases depolymerases and esterase are changing the pectin characteristics This broad variability of raw material makes difficult the standardisation of fruits processing. [Pg.453]

Much of the confusion in pectic enzyme terminology was clarified by Demain and PhaflF in 1957 12) and Deuel and Stutz in 1958 11). Their classification of depolymerases was based on the substrate attacked (pectin m. non-esterified polygalacturonic acid), the mode of attack (random or endo attack vs. terminal or exo attack), and the optimal pH for enzyme activity. However it was assumed that hydrolysis was the... [Pg.103]

Other pectins with degree of esterification of about 10, 30 and 40% (Table I) were obtained by enzymic deesterification of the initial preparation. An orange pectinesterase was used and the pH of the reaction was 6 in order to avoid concurrent base-catalyzed saponification. The action of plant pectinesterase is known (16-18) to result in a blockwise arrangement of free carboxyl groups in the pectic molecules. The enzymic preparation does not contain depolymerase activities as shown by the constancy of the intrinsic... [Pg.63]
