2-Oxogluconic acid

The presence of 2-oxogluconi and 5-oxogluconic acids in red wines, sometimes at fairly high concentrations in wines made from spoiled grapes (Flanzy, 1998), results in colors that shift rapidly toward orange tones. This is probably due to a reaction between these acids and anthocyanins, by fixing the polarized double bond on C4 (Section 6.3.9). [Pg.158]
