Based on single-factor experiment of enzymolysis extraction, the yield was used as index, three factors and three levels L9 (33) were designed (Zhu et al., 2006). Hydrolysis time. Hydrolysis temperature and Mass ratio of trypsin and cellulose were studied in the orthogonal experiment. 

The results of the orthogonal experiment were analyzed in Table 2. The effects of three factors on the yield was in the order of A > B > C, indicating that the optimal combination was A2B3C2, that is, under conditions of mass ratio of trypsin and cellulose as 30 1, hydrolysis temperature as 40°C and hydrolysis time as 1.5 h, the yield of dietary fiber could reach 23%.
