CIC Vitamin C (300 mg/100 g fmit), citric acid and malic acid are responsible for the clean acidic taste of the fresh fruit. A high enzyme activity of a lipoxygenase produces high amounts of (E)-2-hexenal, hexanal and (E)-2-hexenol, all fruity green notes, characteristic of green apples. The cut surfaces develop at prolonged standing 2-heptenal, 2,4-nonadienal and l-octen-3-one, responsible for stale, fatty odour. Methyl butyrate and ethyl butyrate impart the ripe, fruity, estery, fresh, juicy impression.

Figure 2 illustrates the experimental setup employed for in vivo and in vitro flower scent sampling and the chromatographic profiles (total ion current) obtained. A total of 40 compounds were identified in Sansevieria trifasdata flower scent and their relative amounts changed during the day. There is no single, dominant component of the scent. Aldehydes (hexanal, heptanal, heptenal, nonanal, octenal, nonadienal, decanal), alcohols, ketones (6-methyl-5-hepten-2-one, 3-octen-2-one), acetates (benzyl, hexyl, octyl, 2-ethyl-l-hexyl, decenyl, decyl, dodecenyl, dodecyl and tetradecenyl), methyl and benzyl benzoate, methyl salicilate, eugenol, and ds,frflns-a-farnesene, were identified as the main scent constituents. 

Schnermann and Schieberle [54] reported 13 odorants with the highest flavor dilution factors in milk chocolate as 3-methylbutanal (malty) 2-ethyl-3,5-dimetbylpyrazine (potato chip-like) 2- and 3-methylbutanoic acid (sweaty) 5-methyl-(E)-2-hepten-4-one (hazelnut-like) l-octen-3-one (mushroom-Uke) 2-ethyl-3,6-dimethylpyiazine (nutty, earthy) 2,3-diethyl-5-methylpyrazine (potato chip-like) (Z)-2-nonenal (green, tallowy) (E,E)-2,4-decadienal (fatty, waxy) (E,E)-2,4-nonadienal (fatty) 8-decalactone (sweet, peach-like) and 2-methyl-3-(methyldithio)furan.
