Mutton

There are physical—chemical differences between fats of the same fatty acid composition, depending on the placement of the fatty acids. For example, cocoa butter and mutton tallow share the same fatty acid composition, but fatty acid placement on the glycerin backbone yields products of very different physical properties. [Pg.117]

Medium diameter wool iacludes sheep breeds of English origin, eg, southdown, hampshire, dorset, and cheviot, as well as crossbreds, eg, Columbia, targhee, corriedale, and polwarth, from interbreeding with merinos. Coarse diameter wool comes from sheep chiefly bred for mutton, eg, Lincoln, cotswold, and leicester. [Pg.339]

Are you a fan of Wylie s Mr. Dufresne, mutton-chopped and pony-tailed, was visible in the kitchen at the back, corralled like a quarterback by cooks, directing his food into the dining room. [Pg.96]

The initial configuration proposed by Valko et al. for log P gradient determination was based on a gradient cycle time of about 15 min with a 150-mm column [40]. This procedure was modified by Mutton, who stated that resolution could be maintained when the gradient time and/or column length were reduced or the flow rate increased [59, 60]. [Pg.344]

Some of the unsaturated fats ingested by ruminants are partially hydrogenated by bacteria in the rumen. In consequence, milk fat, dairy products, as well as beef and mutton fat, also contain small amounts of trans isomers, about 2 to 9%. However, in fat from ruminants the main trans fatty acid is vaccenic (18 1 t 11), while in hydrogenated fats it is elaidic (18 1 t 9) (Figure 13.14). [Pg.300]

At the age of 40, Henry inherited a fortune of more than a million pounds, though it is not known which of his relatives the money came from. Although he was now one of the richest men in England, he spent little on himself. The clothing he wore consisted of frayed family hand-me-downs of the style of the previous century. Cavendish didn t entertain, and his dinner each night consisted of a leg of mutton— and nothing else. [Pg.94]
