Mobilization of Stored Carbohydrate Reserves in Cereals

The phosphate group is split off from sucrose-6-phosphate by sucrose phosphatase. 

When required, sucrose can be hydrolysed to free glucose and fructose by a jS-fructofuranosidase (sucrase and invertase are enzymes of this type). 

We can divide the metabolic changes associated with food mobilization into two groups (1) mobilization of the reserves of the embryo—a quantitatively minor component of total mobilization and (2) utilization of the reserves of the endosperm.
