Measuring colour and pigment composition

Rapid speetrophotometrie methods have reeently been developed to estimate the eoneentration of the R and Y isochromie fraetions and the total earotenoid content in oleoresins that eould be used as a quahty index (Homero-Mendez and Minguez-Mosquera 2001, Minguez-Mosquera and Perez-Galvez 1998). The methods define independent equations for the R and Y fractions and allow determining the ratio RAT and the total carotenoid eontent.
