Normally, however, the reaction involving the formation of hydroxy-methylfurfural proceeds less readily than does the hydrogenation of glucose and fructose to mannitol and sorbitol, but its occurrence is detected by the fact that tetrahydrofuran derivatives have been isolated from the hydrogenation products.
