Lysozyme industrial application

Besides chitinases, several other commercial enzymes possess chitinolytic activity. For instance, lysozymes, chitosanases, cellulase, and Af-acetylhexosaminidase also have the ability to hydrolyze chitin polymers, even though their substrate specificities are different from that of chitinases. Furthermore, chitinases from different sources may exhibit different chitin modification modes, facilitating its potential use in industrial applications. [Pg.187]

Lysozyme is a bacteriolytic enzyme isolated initially by Alexander Fleming in 1922 from human mucousal secretions. It has since been reported from bovine and human milk, and the msgor commercial source, egg white. Lysozyme has been used in the pharmaceutical industry since 1954 and, additionally, is currently used in cheese. Recent work has suggested its applicability in prevention and/or management of MLF. It is presently in the process of registration for winemaking (Villa, 1996). [Pg.153]

Enzymes. Enzymes are of great importance to the dairy industry as they play a key role in various processes, such as the production and ripening of cheese. Rennets are the giants in milk processing enzymes but other enzymes such as proteases, lipases, lysozyme and p-galactosidase have shown their applications in dairy processing. [Pg.2]

Hydrophilic polymeric support materials provide alternatives to silica for the preparation of HlC sorbents. These materials are more stable to high-pH conditions used as part of the clean in place (CIP) regimes [46]. Representative examples of HIC sorbents are contained in Table 3, and many other in-house laboratory variants can be identified in the scientific literature. From the list of commercialized HIC sorbents found in Table 3, it is apparent that the majority of preparative HIC sorbents can be obtained in particle size ranges (typically 20-65 pm), pore size distributions (typically = 600-1000 A), and surface chemistries suitable for large-scale applications with proteins and peptides. The TSK PS copolymer materials or the Pharmacia cross-linked Superose/agarose range of HIC sorbents are well-known examples in industry. Illustrative of the various uses of silica- and polymer-based HIC sorbents are the examples of avian lysozymes [144], human pituitary prolactin [275], recombinant subtilisin variants [145], and other globular proteins [276-278],... [Pg.165]
