Leuconostoc carnosum

DCH and 15 PS samples were inoculated with a mixed suspension of L. monocytogenes at a final concentration of 1,000 CFU/cm. After 1 h, a snspension of Leuconostoc carnosum (Christian Hansen, Italy) was plated on the same inoculated samples. The final concentration was 100,000 CFU/g. All samples were packaged under vacuum in PET, split into three groups, and stored at 4°C. The first group of each was analyzed at 0 days, the second at 15 days, and the third at 30 days in order to assess the behavior of L. monocytogenes. [Pg.218]

The effect of Leuconostoc carnosum 4010 (CHR Hansen, Italy) is reported in Table 8. As shown, the concentration of L. monocytogenes decreases to <1 CFU/g. Indeed, enrichment cultures managed to cut the concentration of the inoculated microorganism to less than 0 CFU/25 g. In other words, it seems that, after 30 days, protective cultures manage to achieve the 0 tolerance level recommended by FDA/ FSIS (2003b). [Pg.229]
