The edible roots of this plant are one of the world s leading vegetable crops. They are also the richest source of vitamin A among the commonly-used vegetables. Carrots are a mem-E)er of the parsley family (Umbelliferae) of plants. Other well-known members of this family are caraway, celery, dill, fennel, parsley, and parsnips.

The underground bulb of the onion plant is the sixth leading vegetable crop of the world. It is distinguished by its pungency when raw and the appetizing flavor it imparts when cooked with various other foods. The odor is due to an oil, which readily forms a vapor and escapes into the air when onions are peeled or cut It affects nerves in the nose connected with the eyes, and makes tears flow. 

WORLD AND U.S. PRODUCTION. The potato is the leading vegetable crop of the world, by a wide margin. About 270 million metric tons are produced worldwide, annually. The leading potato-producers, by rank, are U.S.S.R., Poland, China, United States, India, Germany, U.K., Netherlands, France, and Spain. 

The potato is also the leading vegetable crop of the United States. The United States produces about 20 million short tons annually. By rank, the leading states are Idaho, Washington, Colorado, Wisconsin, Oregon, Maine, California, North Dakota, Minnesota, and Michigan. Idaho alone accounts for 27% of the nation s potatoes. 

Tomatoes rank second among the leading vegetables of the United States, with a production of about 16.8 million short tons annually and the leading tomato-producing states are Elorida, California, and South Carolina. Florida alone produces 43% of the U.S. tomato crop. ...

This is very important because com oil is the second leading vegetable oil consmned and produced 4.45 billion pounds in 2015 in the United States (USDA, 2015 USDA, 2014). Since US adults age 65 and older heavily consume this high fat oil, their population is rapidly increasing and is projected to reach 71 million by 2030. The objectives of the present study are to summarize the long-term health effect of high volume of com oil consumption in aging animals and to understand the relevant mechanisms.
