The NADH produced in this reaction shifts the equilibrium in the liver cytosol of the lactate dehydrogenase from pyruvate formation to lactate synthesis.

To start with, in methanol - which always contains some water unless extreme solvent drying is pursued - sucrose either undergoes hydrolysis or solvolysis. The latter is indicated in red in Fig. 11 and usually yields methyl-o-glucopyranoside and fructose from sucrose instead of methyl-fructoside and glucose. These methylated sugars are non-reducing and chemically more stable they are crmsidered unreactive to retro-aldol chemistry, since their ether bond should be hydrolyzed prior to be of use in the lactate synthesis.
