An extension of the Seven Countries Study, by Ancel Keys and colleagues, indicated the particular importance of the flavonoids. During the study, which was reported in 1980, random samples of the food eaten by the participants were taken and stored for future analysis. When this was done, it was found that the average intakes of the antioxidants vitamin E, P-carotene and vitamin C were not related to the 25-year coronary heart disease mortality rates. In contrast, the intake of flavonoids was inversely related to the mortality. [Pg.519]

HISTORY. The cholesterol-heart disease debate was officially opened when, in 1953, Dr. Ancel Keys at the University of Minnesota reported a positive correlation between the consumption of animal fat and the occurrence of atherosclerosis in humans Subsequently, other studies correlated high blood levels of cholesterol with increeised incidence of atherosclerosis in humans. In 1964, the American Heart Association recommended that the general public reduce cholesterol intake to 300 mg/day. Subsequently, various government and health agencies around the world have followed suit. Thus, attention was, and still is, centered on cholesterol. [Pg.198]

Fat and Heaith Summary. That the form of dietary fat is implicated in atherosclerosis is well documented by unbiased, controlled experiments stemming from the research initiated by Dr. Ancel Keys. [Pg.338]

Appreciation is also expressed to Professor Ancel Keys and his colleagues of the Seven Countries study, and to the American Heart Association for permission to cite from reports published in Circulation. [Pg.155]
