Two major food proteins are used in this section. Whole casein (or caseins) is a family of phos-phorylated proteins that constitute 80% of milk proteins. It contains four different monomers a,-casein, a2-casein, P-casein, and K-casein (Turhan et al., 2003). Among them, P-casein is the major component of whole casein. It presents a random coil, an asymmetric configuration, and has an extremely flexible structure. It is made up of 209 amino acids, and it has a molecular weight of 23.8 kDa. The first 50 amino acid residues contain a negative charge at pH 7 so that this part of the molecule is hydrophilic.
