HYDROGENATION AND MARGARINES

As stated above, an oil is unsaturated if the fatty acids contain double bonds. Liquid oils can be hydrogenated, using a nickel catalyst in the saturation process and turned into solid such as margarines. [Pg.164]

In the production of margarines, sunflower, corn, cotton, sesame, soybean and even fish oil can be used as a starting material. [Pg.164]

Margarines are less preferable than oils for good health. Since the melting points of margarines are higher than that of human body temperature, they may cause some coronary diseases. [Pg.165]
