Triacylglycerols are named in various ways. For example, unsaturated fatty acids sometimes are indicated as U and the saturated as S. If glycerol is completely esterified with stearic acid, the resulting monoacid TAG may be designated as SSS, or, more descriptively as StStSt, tristearin, tristearoylglycerol, or glycerol tristearate.

Into a series of 10 ml measuring flasks respectively 0 (ref.), 25,50,100 and 150mg of glycerol trielaidate is weighed accurately and each sample is made up to 200mg with glycerol tristearate. Each of these mixtures is dissolved in carbon disulphide and made up to the mark at 20 C. The analysis should be performed with solution, cells and spectrophotometer as near as possible to 20 °C.

The absorption or transmission of the sample solution is measured against the reference solution (glycerol tristearate) in the 1050-900 cm (9.5-11 nm) range, using the same instrument setting as in the calibration procedure. If isolated trans- m-saturated components are present, there is a maximum (or minimum) at about 970cm (10.3nm). A straight line is drawn between the adsorption minima at around 1000 and 925 cm (10.0-10.8 nm) (see Fig. 6.3).
