Gluten definition

The change in daily output of fecal fat forms the basis for the definitive diagnostic test for gluten induced enteropathy (F16, F21). This diagnosis is justified if the patient presented with the main features of the malabsorption syndrome, if the fecal fat output fell to normal levels on a gluten-free diet, and if subsequent reintroduction of gluten into the diet caused an unequivocal increase in fecal fat...

While yeast must have some nitrogen for cell building still this requirement is so small that as far as the bread manufacturer is concerned the yeast may be considered to have little effect on the gluten of the bread flour. Pyroligneous acid was shown by Fourcroy and Vauquelin to be impure acetic acid, and Berthollet s zoonic acid (1798 (see p. 514)), obtained by the distillation of gluten and animal matter, was shown by Thenard to be also mostly impure acetic acid. On the other hand, Fourcroy and Vauquelin mistakenly supposed that some definite organic acids such as formic and lactic acids, which do not crystallise, and pyrotartaric acid, are acetic acid contaminated by impurities which are difficult to separate. Some of their mistakes were due to incorrect methods of treatment e.g. they distilled lactic acid, although...
