Polyphenols, particularly trans sinapic acid, create dark colour and bitter taste, and also react with proteins, in a similar way like glucosinolates breakdown products. Finally, phytic acid forms complexes both with trace metals, which lower their bioavailability, and with globulins too, which change their IP to low pH values (Kroll, 2007). 

The analysis of glucosinolates breakdown products is rather more complicated due to the volatility of many of the compounds and the lack of absorbance exhibited by some of the products, namely thiocyanates and nitriles. A particular analytical shortcoming is the lack of a suitable method for measuring the levels of a number of different glucosinolate hydrolysis products in plasma and urine samples, and this should be a priority for future research.
