A 4% solution of gelatin (often modified, i.e. succinylated gelatin) is also used as a plasma expander. For this application, 500ml-ll of the sterile solution is infused slowly. In rare occurrences, infusion (particularly rapid infusion) of the gelatin solution has been known to initiate hypersensitivity reactions. After its infusion, gelatin is excreted relatively quickly and mostly via the urine. 

We succinylated FPC, SPI, casein, and ovalbumin as well as gelatin, with the result that their whippability, foam stability, and emulsifying activity were improved to a certain extent (see Table V). 

Each of the proteins was dispersed in an alkaline medium (pH 7-9) and then treated with succinic anhydride amounting to 10 times the concentration level (molar basis) of amino groups present in the protein. The degrees of succinylation measured by a usual method (13) were as follows 98.0% for FPC, 95.2% for SPI, 94.0% for casein, 97.7% for ovalbumin, and 98.8% for gelatin.

Acetic anhydride is an important industrial reagent. Over one-half its annual production of approximafely 750,000 fons is used for the manufacture of cellulose acetate. Cellulose acetate is a wddely used textile fiber and is the chief component of cigarette filters. Acetic anhydride is the acetylation reagent used for the production of aspirin (acetylsalicylic acid). Succinic anhydride finds use in the succinylation of gelatin used as a blood plasma substitute, as a food preservative in chicken against Salmonella, and as a dog food preservative.
