From the product IR spectrum (Fig. 4.19), it can be concluded that in the product the galactose group is attached to -CD through a- glycosidic bond. The type of glycosidic bonds may be a-1,2, a-1,3 or a-1,6 glycosidic bonds. 

Based on the results of hydrolysis analysis, MS, IR spectroscopy and C-NMR analysis, the product can be confirmed to be single-substituted Gal- -CD with galactose group and is attached to 3-CD through ot-l, 6 glycosidic bonds. Its schematic diagram is shown in Fig. 4.21. 

Figure 3 shows that by adding HRP the oxidation rate of guar gum by GO is enhanced. In the presence of HRP more than 40% of the galactose groups in the guar are oxidized after three hours, while in the absence of HRP die same amount of GO oxidizes less than 10% of the galactosyl side-chains.
