Category 1 Polymers, which are directly extracted or removed from biomass. Certain polysaccharides such as starch, cellulose, and proteins like casein and gluten constitutes this categoiy. By nature, all this are hydrophilic and somewhat ciystalline-factors and creates problems while processing and performance, especially in relation to packaging of moist food products. In this chapter, first a short description is given of the various industries where enzymes are used as processing aids or processed into final products.
