Indoles (4,5-benzopyrroles) are components of a generally undesirable odour of certain foods. Typical compounds are indole and 3-methylindole, which is trivially called skatole (8-170). At higher concentrations, these compounds have a faecal smell (as they are also found in faeces), but in low concentrations, they have a flowery smell. Both indoles are the result of degradation of tryptophan by microorganisms (also in the digestive tract of animals) or by pyrolysis of tryptophan. For example, these compounds contribute to a specific boar odour in pork meat and the typical odour of cooked beef tripe (see Section 8.2.12.1). For this reason, the traditional... [Pg.600]

Steatorrhoea is the formation of non-solid faeces. Floating stools, due to excess fat, are oily in appearance and foul smelling. There is increased fat excretion, which can be measured by determining the faecal fat level. Possible biological causes can be lack of bile acids (due to liver damage or hypolipidaemic drugs), defects or a reduction in pancreatic enzymes (lipase), and defective mucosal cells. The absence of bile acids will cause the faeces to turn grey or pale. [Pg.88]

Ambergris consists primarily of a soft, waxy mass which builds up in the intestine of the sperm whale, in response to mechanical injury from horny jawbones of cuttlefish and squid, its preferred food. Ambergris acts as an antibiotic wound closure, in which indigestible food components are embedded. The concretions fall into the sea through vomit, faecal discharge, or the natural death of the animals. The almost black lumps weigh anywhere from a few grams up to 100 kg, and smell initially of faeces. They drift on the surface due to their low density (0.78-0.93 g/cm ), and over the course of years or decades, they are converted... [Pg.140]
