Factors for the design of antimicrobial film or packaging

Inherent antimicrobial activity and chemical character of films 

The organic acids, sorbate, propionate, and benzoate, as well as their respective anhydrates, have been proposed and tested for antimicrobial activity (Quintavalla and Vicini, 2002). 

Organic acids combined with dynamic gas exchange modified atmosphere packaging are also known to improve some shelf life properties of retail pork chops.
