Elderberry green

Elderberries are used medicinally for catarrh, sore throats, fever and asthma. When cooked with a sweetener into a thick syrup known as a rob they offer the same health benefits. Elderberries are excellent in pies, cobblers, jam, chutney, muffins and puddings. Elderberries are rich in vitamin C, calcium, phosphorus and beta-carotene. The berries may be dried and used in winter. Avoid green, unripe berries. The berries should be cooked before eating, remove the seeds when making jam or wine. Elderberry jam is sometimes served as a alternative to cranberry sauce, accompanying turkey or game. [Pg.21]

Elderberry (Sambucus nigra) is cultivated on small scale in Europe. The fruits have a high concentration of red and purple anthocyanins and a relatively low concentration of sugars, organic acids and aroma compounds, which make this juice attractive as a natural colour ingredient in other red fruit products [126-129]. The fresh green odour of elderberry juice is associated with volatile compounds with typical green notes such as 1-hexanol, 1-octanol, (Z)-3-hexen-l-ol, ( )-2-hexen-l-ol, hexanal and ( )-2-hexenal, whereas the floral aroma is mainly due to the presence of hotrienol and nonanal [127-130]. [Pg.164]

Various natural dyes exist the use of most of these is unrestricted in most countries. Examples include caramel (brown), annatto (red-orange dye from achiote seeds, active ingredient is bixin, 24.32), chlorophyll (green from Chlorella algae), cochineal (red), betanin (red/purple from beets, 24.33 —various tautomers and zwitterions are possible), saffron (yellow the dye molecule is crocin, 24.34), turmeric (yellow, active dye is curcumin, 24.35), paprika (red, zeaxanthin, 24.36), and elderberry juice. Several of these compounds have been shown to have active benefits for human health. Such compounds are permitted as food dyes even when they are manufactured and synthetic carotene does not need to be extracted from carrots to be allowed. [Pg.1170]
