Effects on lipid oxidation

Once determined, the concentration (as determined above) is multiplied by the response factor. This quantification technique is used when the primary objective is to evaluate treatment effects on lipid oxidation, and greater accuracy is desired. [Pg.533]

Tocopherols and tocotrienols, collectively known as tocols, are monophenolic and lipophilic compounds that are widely distributed in plant tissues (7). The main commercial source of natural tocopherols is the soybean oil. Tocotrienols, less common than tocopherols, are present in palm oil, rice bran oil, as well as cereals and legumes (11). Tocopherols and tocotrienols are classified into a-, (3-, y-, and 5-, depending on their chemical structures (Figure 7). In general, tocotrienols have a stronger antioxidant effect on lipid oxidation than tocopherols. The antioxidant activity of tocopherols is dependent on temperature and is in the order of 5- > y->P-> oc-tocopherol (7). Tocopherols (mixed natural concentrate) are a golden... [Pg.542]

Sodium chloride content is closely related to ham quality, not only because of its direct effect on taste but also because of its effect on flavour development (75). The influence of sodium chloride content on volatile compound generation could be related to its effect on lipid-oxidation reactions, enzyme activity and microbial growth. As expected, salt content affected significantly a number of compounds described previously as dry-cured odorants (Figure 1) seven aldehydes and two acids. [Pg.76]

Olive oil has an effect on lipid oxidation—inpatients with PAD, antioxidants present in extra virgin olive oil protect LDL against oxidation and decrease LDL uptake by macrophages compared to refined olive (95). [Pg.108]
