Sweet-Potato Cookies

I ve adapted these easy and wholesome cookies fiom one of my favorite health-oriented cookbooks, N ourishing Traditions by Sally Fallon. A fantastic treat for kids, they re sweetened naturally with sweet potatoes and maple syrup and contain no refined sugar. I make these for Clyde s snack day or class parties at school, and because they bake to a gorgeous orange color, they re also perfect at any fall or Thanksgiving table. [Pg.210]

Sweet potatoes may be cooked in much the same ways as Irish potatoes, but they require only about half as much cooking time. In addition, they are good in casseroles when accompanied by apple slices or pineapple rings and seasoned with spices such as allspice and cinnamon. Finally, mashed cooked sweet potato may be used to make biscuits, breads, cakes, cookies, custards, muffins, and pies. [Pg.1009]

This is also true of cookies, cakes, and most other sweets, since both flour and sugar come from plants—flour from wheat, and sugar from sugar cane.
