A cell membrane is a fluid mosaic of phospholipids in two layers. The hydrophilic poles face outwards and the hydrophobic poles form the inside of the membrane. The Kpid cell surface is strewn with proteins. If we compare a cell membrane to a chocolate cream sandwich cookie, the hydrophilic poles would be the cookies on the outside and the hydrophobic poles would be the chocolate cream in the middle. The surface proteins would be found in the small holes on the surface of the cookies. If we compared a cell membrane to a jam sandwich, the hydrophilic poles would be the slices of bread and the lipophilic, hydrophobic poles would be the jam. The surface proteins would be set in the air bubbles in the bread. [Pg.200]

Add to that roster sweets and snacks (such as date nut roll), chocolate-coated and stuffed dates (with crushed nuts), date jams, date butter and cream, and date preserves. Further, with the pit removed, a date becomes a perfect little container for making fun food for the kids peanut butter, marmalade, fruit jams, or honey stuff neatly into the pit cavity ... [Pg.98]

Sandwiches consist of one or more flavours of ice cream between two biscuits or wafers, which may have been covered in chocolate (Figure 5.4a). Biscuits are made by mixing flour, sugar and fat, shaping and then baking. The sandwich can be assembled layer by layer, i.e. the first biscuit or wafer is covered with ice cream, which in turn is covered with a second biscuit or wafer. Alternatively, the ice cream can be extruded between two biscuits. The product is then hardened, dipped in chocolate or couverture if required, and packaged. [Pg.89]
