The appeal of chocolate is universal, but the pleasures of eating chocolate products may perhaps be tempered by their fat and sugar content. However, in a series of human feeding studies it has been shown that the high proportion of stearic acid in the cocoa butter of chocolate does not adversely affect plasma lipids. Two recent reports of antioxidant activity have increased interest in the health aspects of chocolate an in vitro low-density liposprotein (LDL) oxidation study and a short-term in vivo study. Epicatechin, the major monomeric polyphenol antioxidant in chocolate, and an extract of chocolate liquor were both found to stimulate cellular immune response in vitro. [Pg.243]

Actin and tubulin are two important cellular components that are involved in cell shape and movement. Actin is present in all mammalian cells and is involved in cellular transport and phagocytosis (eating of extracellular materials), provides rigidity to cell membranes, and when bonded to tropomyosin and troponin, forms the thin filaments of muscle. Thbulin is the subunit from which microtubules are self-assembled. Microtubules are most commonly known for their role in cell division. The mechanisms of self-assembly of these macromolecules have been well studied and are important models of biological assembly processes. Below we examine each of these processes. [Pg.159]

Microanalytical Studies. The EELS investigations after in vivo as well as after in vitro treatment of EAT with the antitumor agents titanocene dichloride and vanadocene dichloride reveal reproducibly the main enrichment of the central metals Ti and V within the nuclear heterochromatin. To a minor extent, the metals are associated with the euchromatin, the nucleolus, and the cytoplasmic ribosomes. In most cases, no metal atoms can be detected in other cellular regions by EELS. This means that the treatment with titanocene or vanadocene dichloride results apparently in an accumulation of the central metals Ti and V within those cellular regions which are rich in nucleic acids. [Pg.329]
