Ketones often have useful solvent properties (acetone is found in nail polish remover, for example) and are frequently used in industry for this purpose. Aldehydes typically have strong odors. Vanillin is responsible for the pleasant odor in vanilla beans cinnamaldehyde produces the characteristic odor of cinnamon.
