The malt, which is rich in colour, is free of amylase it is a good foam builder and is used mainly for the flavouring of malt and bock beers. Light caramel malt is produced through a similar process however, it is dried at a low temperature after starch conversion. Bock beers are similar in color to dark lagers, but may be a bit darker, sometimes as dark as 30 SRM. Bocks are heavier beers, having starting densities of 1.060 up to as much as 1.080 for a doppelbock. Bocks have bitterness of about 20-30. [Pg.136]

Wort boiling with hops or hop products is done in a brew kettle (hop kettle) in which the initial and subsequent worts from the lautering step are collected. Addition of hops is adjusted according to the type and quality of beer desired. Bock beer—At one time, this beer was sold in the spring, when, for unknown reasons, it was associated with the symbol of the goat. This is one dark beer. When held up to sunlight in a clear glass, I couldn t see through it at all Auktor Bock is strong. It has a thick, beige head (a bottle cap floats on it ), a pungent, malty aroma, and a rich flavor. This beer could be considered chewable.
