Vitamin C, or ascorbic acid, is important in the formation of collagen, a protein that holds together the connective tissues of skin, muscle, and blood vessels. Vitamin C is obtained from eating citrus fruits. A deficiency of vitamin C causes scurvy, a common disease of sailors in the 1600s who had no access to fresh fruits on long voyages. In Chapter 3, we learn why some vitamins like vitamin A can be stored in the fat cells in the body, whereas others like vitamin C are excreted in urine. [Pg.82]

The stomach empties liquids faster than solids. The rate of transfer of gastric contents to the small intestine is retarded by the activity of receptors sensitive to acid, fat, osmotic pressure and amino acids in the duodenum and the small intestine and stimulated by material that has arrived from the stomach. Gastric emptying is a simple exponential or square-root function of the volume of a test meal - a pattern that holds for meals of variable viscosity. To explain the effect of a large range of substances on emptying, an osmoreceptor has been postulated which, like a red blood cell, shrinks in hypertonic solutions and swells in hypotonic solutions. [Pg.345]

The membrane separates the blood from a dialyzing solution, or dialysate, that is similar to blood plasma in its concentration of needed substances (e.g., electrolytes and amino acids) but contains none of the waste products. Because the concentrations of undesirable substances are thus higher in the blood than in the dialysate, they flow preferentially out of the blood and are washed away. The concentrations of needed substances are the same on both sides of the membrane, so these substances are maintained at the proper concentrations in the blood. The small pore size of the membrane prevents passage of blood cells. However, Na and Cl ions and some small molecules do pass through the membrane. A patient with total kidney failure may require up to four hemodialysis sessions per week, at 3 to 4 hours per session. To help hold down the cost of such treatment, the dialysate solution is later purified by a combination of filtration, distillation, and reverse osmosis and is then reused. [Pg.577]

The epithelial layer is in immediate contact with the lumen of the gastrointestinal tract. The lamina propria, which functions as a structural support for the epithelial layer, is situated on the basolateral side of the epithelial layer. The lamina propria contains lymph vessels, smooth muscle cells, nerves, and blood vessels, which nourish the epithelium. The muscularis mucosa makes up the deepest layer, which is thought to be involved in contractility.8 A more detailed description of the forces that hold together the epithelial layer is provided below. [Pg.17]
