Corrosion. Corrosion of aluminum cooking vessels by acid fruit juices decreases as the concentration of sucrose increases (87). Edible beet molasses and, to a lesser degree, sugar solutions have a reported antirust effect when painted on metal surfaces (115). Affermi (1) has studied the effect of boiling sucrose solutions on many metals, including nine steel alloys. Sucrose has buffering capacity (41) which may explain, in part, its retardation of corrosion. [Pg.9]
