The efficiency of the carbon source conversion into pigments and the optimization of the growth medium with respect to its availability and price have been the subject of intensive studies. Other hand, Shen et al. (2010) investigated sweet potato starch-chitosan films and the effect of water solubility was corroborated. They results showed a reduction in water solubility with the addition of chitosan therefore, the incorporation of chitosan enhanced the water absorption resistance. Bourtoom and Chinnan (2008), also reported the same results, when they produced blend films from rice starch and chitosan. Their analyses demonstrated that the film solubility decreased with the addition of chitosan. However, Zamudio-Flores et al. (2010) reported that the solubility values obtained in blend films from banana starch-chitosan increased when chitosan was added because of hydrophilic behavior imparted by the cationic character of chitosan, in which interactions between hydroxyl groups of water molecules and amine groups of chitosan could be carried out.
