The issue of labeling of allergens has become a recent concern to both governing agencies as well as consumers. Proteins from various sources are utilized in the creation of process flavors , some of which may be considered to be allergens, and therefore should be labeled. The materials that are considered to be allergens in their respective regions can be found in Table IV. [Pg.51]

Appendix Ilia of Directive 2003/89/EC (EC, 2004), to the list of major allergens that by mandate have to be labeled on prepackaged foods (EC, 2006) in accordance with an opinion of the Scientific Panel on Dietetic Products, Nutrition and Allergies (NDA, 2005).
