One of the primary variables which influences the recoveries of volatile flavor and aroma chemicals during spray drying is the wall material. Utilization of spray dried flavors in food systems presents further constraints on the wall material selection process. Of the food grade polymers available to the manufacturer of spray dried flavorings (i.e., gum acacia, lipophilic starches, maltodextrins, corn syrup solids), no single wall material exhibits the ideal traits deemed necessary for this economically important process. [Pg.12]

Gum arabic comes from various species of Acacia. The gum exudes through cracks, injuries, and incisions in the bark and is collected by hand as dried tears. Gum arabic is unique among gums because of its high solubility and the low viscosity and Newtonian flow of its solutions. While other gums form highly viscous solutions at 1—2% concentration, 20% solutions of gum arabic resemble a thin sugar syrup in body and flow properties. [Pg.488]

FitzGerald tested his idea on readily available subjects, 14 medical students, whose gastric secretion he stimulated by injections of histamine. He found in control tests that the mean peak gastric output of acid was 60 mEq in an unspecified time and that the gastric juice contained 7.99 mEq of NH. He then gave each subject 15 g of urea dissolved in 1 fluid ounce of syrup of acacia. That is an 8 M solution. The mean peak acid output in the gastric juice fell to 27 mEq, and the concentration of NH rose to 36.54 mEq. " ... [Pg.266]
