Biswas and Haydon [61] also found a striking effect of pH on the rigidity of the protein film. This is illustrated in Figure 6.37, where the shear modulus G and surface viscosity are plotted as a function of pH. The elasticity of the film is seen to be at a maximum at the isoelectric point of the protein. Biswas and Haydon then determined the rate of coalescence of petroleum ether drops at a planar O/W interface by measuring the lifetime of a droplet resting beneath the interface.
